A warm, bakery-style dessert with creamy cheesecake layers, bursting blueberries, and a buttery crumble topping. This dessert combines three dreamy layers: a soft, buttery base, a silky cheesecake center, and a golden crumble topping with juicy blueberries throughout.

It’s meant to be served warm, shared with people you love, and finished with vanilla ice cream for that perfect, cozy moment.

Directions

1.  Brown the butter

In a saucepan, melt butter over medium heat until golden with brown specks and a nutty aroma. Let cool slightly.

2.  Make the base

Mix browned butter with sugars until smooth. Add egg and vanilla, then stir in dry ingredients until just combined. Press ¾ of the dough into a greased skillet or baking dish.

3.  Cheesecake layer

Beat cream cheese, powdered sugar, and vanilla until smooth. Spread gently and evenly over the base.

4.  Blueberry layer

Toss blueberries with sugar, lemon juice, and cornstarch. Spoon over the cheesecake layer. Add small swirls of blueberry jam if using.

5.  Crumble topping

Mix flour, brown sugar, cinnamon, and cold butter with your fingers until crumbly. Sprinkle over the top along with the remaining dough pieces.

6.  Bake

Bake at 350°F for 30–35 minutes. Edges should be golden and the center slightly soft — it will firm up as it rests.

7.  Rest & serve

Let rest for 10 minutes before serving. Scoop warm into bowls and finish with vanilla ice cream and a pinch of flaky sea salt.

Browning the butter is the step that makes this dessert. Don’t skip it — it takes about 5 minutes and gives the base a rich, nutty depth you can’t get any other way.

Serving Suggestions

Serve warm in a beautiful dish — this one is made to be presented. Vanilla ice cream on top is not optional.

Best eaten the day it’s prepared while the crumble is still golden and the cheesecake layer is set but soft.

Ingredients

For the Base (Cookie-Style Crust)

  • ½ cup salted butter, browned for best flavor
  • ¼ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • Pinch of salt

For the Cheesecake Layer

  • 8 oz cream cheese, softened
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract

For the Blueberry Filling

  • 1½ cups fresh or frozen blueberries
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tbsp cornstarch
  • 2–3 tbsp blueberry jam for extra richness (optional)

For the Crumble Topping

  • ½ cup flour
  • ⅓ cup brown sugar
  • ¼ cup butter, cold and cubed
  • ½ tsp cinnamon
  • Pinch of salt

For Serving

  • Vanilla ice cream
  • Flaky sea salt
