A Taste of Fall: Gluten & Dairy-Free Chocolate Chip Cookies + My Seasonal Favorites

Happy (Almost) Fall, Friends! 🍂

This is truly one of my favorite times of the year.

There is something about the beginning of fall that makes me want to slow down and settle into home—fresh apple cider simmering with cloves, cozy pajamas, something delicious baking in the kitchen, and more evenings spent curled up with a good book.

I’ve always been a homebody at heart. As a mom, I put a lot of time and energy into my children and into creating a home that feels like a place of peace, rest, and refuge. Having a peaceful place to raise my children, cook together, read, pray, laugh, and simply be is incredibly important to me. I don't believe a beautiful home is just about how it looks. It's about how people feel when they're inside it.

One of my dreams for the future is to have the kind of home where the doors are frequently open to others—a house filled with family, friends, neighbors, backyard dinners, barbecues, celebrations, and people gathered around the table.

Hospitality is such a beautiful way to build community and love people well. I hope my children grow up remembering not only what our home looked like, but how it felt: peaceful, welcoming, joyful, and full of love.

And, of course, a cozy home needs cookies. These Chickpea Gluten/Dairy Free Cookies are so gooey and delicious, and will make your home smell like Fall!

Graceful Glow Chocolate Chip Chickpea Cookies

A better-for-you treat the whole family will love.

There is something about homemade chocolate chip cookies that instantly makes a house feel cozier. These Graceful Glow Chocolate Chip Chickpea Cookies are my healthier take on a classic—soft, naturally sweetened, flourless, and made with simple ingredients you may already have in your pantry.

And before the kids ask: no, they don't taste like chickpeas!

The chickpeas provide fiber and plant-based protein, while creamy nut butter gives the cookies their rich, satisfying texture. They're perfect for an after-school snack, Sunday meal prep, or one of those cozy evenings when you want something sweet. I have been enjoying them with my afternoon cup of coffee or chai tea latte!

Ingredients

  • 1 ¾ cups cooked chickpeas, rinsed and drained very well
  • ½ cup creamy natural peanut butter or almond butter
  • ¼ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • ⅓ cup mini dark chocolate chips
  • Flaky sea salt for topping, optional

Directions

1. Preheat the oven.
Preheat your oven to 350°F and line a baking sheet with parchment paper.

2. Prep the chickpeas.
Rinse and drain the chickpeas thoroughly, then pat them dry to remove as much excess moisture as possible.

3. Make the dough.
Add the chickpeas, nut butter, maple syrup, vanilla, baking powder, and sea salt to a food processor. Blend until completely smooth and creamy, scraping down the sides as needed.

4. Add the chocolate.
Remove the blade and gently fold in the mini chocolate chips.

5. Shape the cookies.
Scoop approximately 2 tablespoons of dough per cookie onto your prepared baking sheet. These won't spread quite like traditional chocolate chip cookies, so gently flatten and shape each cookie before baking.

For an extra-pretty finish, press a few additional chocolate chips into the tops.

6. Bake.
Bake for approximately 18–20 minutes, or until the cookies are set and lightly golden around the edges.

7. Cool and enjoy.
Allow the cookies to cool on the baking sheet for about 10 minutes before transferring them to a cooling rack. Finish with a tiny sprinkle of flaky sea salt if you'd like.

Kristen's Tip

If you're making these for kids, I love using mini chocolate chips. You get a little chocolate in almost every bite without needing a huge amount.

I also like making a batch on Sunday and storing them in the refrigerator so we have an easy after-school treat ready for the week.

Why I Love Them

These aren't meant to convince you that a chickpea is magically the same thing as a traditional bakery cookie. They're simply a delicious way to turn wholesome ingredients into a treat that still feels like a treat.

They're flourless, naturally sweetened with maple syrup, easy to make with kids, and perfect for prepping ahead.

Store them in an airtight container in the refrigerator for up to five days, or freeze them for later.

Faith Lately

I've been meeting weekly with a Christian mentor from my church, and I'm incredibly grateful for that time.

One passage we've been reflecting on is 2 Chronicles 20:17. It's a beautiful reminder that we don't have to fight every battle in our own strength. Sometimes our job is to stand firm, trust God, and watch Him work.

A thought I've been carrying with me is this: If I trust in God's faithfulness, believe His Word, obey His commands, and seek to honor Him with my life, I can have confidence that He is with me.

That has been such an important reminder in this season.

Faith doesn't mean that life will always be easy or that we will understand everything God is doing. But there is tremendous peace in knowing that we don't have to control every outcome.

We can be faithful with what is in front of us and trust Him with the rest.

What I'm Listening To

I've also been spending more time listening to Christian podcasts during the week.

One episode I enjoyed was "What Christians Get Wrong About Spiritual Warfare." Link here. It's an interesting conversation about what Scripture actually teaches about spiritual battles and how Christians should approach them. By the way, a lot of godly men say how much Joby Martin has changed and transformed their lives!

For anyone navigating dating and hoping for a godly marriage, I've also been enjoying Pastor JP Pokluda's Becoming Something podcast linked here.

I appreciate conversations that encourage people to date with wisdom, discernment, and intention rather than simply following whatever the culture says relationships should look like. As Warren Buffett once said “For both men and women, the most important decision you’ll ever make is your choice of spouse.” Someone also told me that whenever you marry someone, you are betting your life on that person, and a bad bet can really blow your life up. It is so true.

I wore a Revolve dress to dinner at Eberly this week and felt fabulous in it. Sometimes getting dressed up for a beautiful dinner is just good for the soul.

And if you're looking for a great dinner spot, I loved our dinner at Eberly. The beef tartare, crab cakes, and a glass of Sauvignon Blanc made for such a fun evening. The ambiance is fabulous too!

What I'm Reading

I'm currently reading Good Boundaries and Goodbyes by Lysa TerKeurst, and it has given me so much to think about when it comes to relationships, forgiveness, and God-honoring boundaries. One idea that has really stayed with me is that loving someone doesn't mean giving them unlimited access to your life. When someone is repeatedly reckless with your heart, dishonest, or untrustworthy, wisdom may require creating distance—and sometimes, unfortunately, that means saying goodbye.

I've also been thinking about how boundaries and grace don't have to oppose one another. We can forgive someone, pray for them, and genuinely wish them well without continually placing ourselves in situations where the same hurt can happen again. Forgiveness doesn't automatically restore trust; trust is rebuilt through honesty, accountability, changed behavior, and consistency over time.

Healthy boundaries aren't about punishing or controlling another person. They're about protecting what God has entrusted to us—our faith, our families, our hearts, and the peace within our homes. I'm learning that you can close a door without carrying bitterness behind it, and sometimes saying goodbye isn't a failure to love; it's learning to love with both grace and wisdom.

Four Years of Gratitude

Today also carries a much deeper meaning for our family.

Four years ago today, my sister was diagnosed with brain cancer.

It was an incredibly long and painful journey for our entire family, and there were seasons filled with uncertainty and fear.

Today, we get to say something we will never take for granted:

She is cancer-free.

I'm overwhelmingly thankful for her life and for the gift of having my sister here. Thank you to everyone who prayed for her, financially contributed to her getting the integrative treatments that she was able to get to help save her life, and prayed for our family.

Walking through something like that changes your perspective. It reminds you how precious ordinary days really are—the phone calls, family dinners, laughter, holidays, and moments that can be so easy to rush past.

God has been so good to our family.

There are so many things He has been doing in my life lately that I can't wait to share with you soon.

For now, I'm entering this new season with a grateful heart, a cozy home, my Bible and books nearby, my kids under my roof, and probably something baking in the kitchen.

Here's to everything pumpkin spice, hot apple cider, cozy pajamas, peaceful homes, and the beautiful beginning of fall. 🍎🍂
